Metro Type Alphabet

Love this alphabet...it is pretty bold, so it is easily seen!!!!

Here are some more cards from a few months ago.....I'm gonna mass post these so that I can get them all on here....love this pointsetia!!!!


Here's a bunch of winter.....which we are still having here in Colorado....I have a stack more to scan on my desk...but some great designs!!!!

Chicken Tortilla Soup

2 whole boneless, skinless chicken breasts
1 TBL Olive oil
1 1/2 tsp. cumin
1 tsp Chili powder
1/2 tsp garlic powder
1/2 tsp salt
1 Tbl. olive oil
1 C. diced onion
1/4 C. Ret bell pepper
1/4 C. green bell pepper
3 cloves garlic minced
1 can (10 oz.) Rotel
32 oz. chicken stock
3 Tbl. tomato paste
4 C. hot water
2 cans (15 oz ) black beans, drained
3 Tbl. cornmeal
5 whole corn tortillas cut into trips

Garnishes
sour cream
diced avocado
diced red onion
salsa
grated cheese
Cilantro

Preheat oven to 375F.  Mix cumin, chili pepper, garlic powder and salt.  Drizzle 1 Tbl. olive oil on chicken, then sprinkle with spices.  Set aside rest of mix.  Place chicken on a baking sheet.  Bake for 20 to 25 min.  until chicken is done.  Use 2 forks to shred.  Set aside.  Heat 1 Tbl. olive oil in pot over med. heat.  Add onions, peppers and garlic.  Stir and cook then add rest of spices.  Pour in rotel chicken stock, tomato paste , water and black beans.  Bring to a boil, reduce to simmer and cook for 45 min.  Mix cornmeal with small amount of water.  Pour into soup, simmer 30 more min.  Turn off heat and let sit 15-20 min.  Stir in tortilla strips.  Ladel into bowls and serve with ganishes.  Yummy!
