Thought I'd post a recipe....I love any vegetable creamed, and came across this creamed spinach recipe...so of course I had to try it...it was yummy! Steven even liked it and he doesn't like cooked spinach!!!
Creamed Spinach
3 C. water
2 (10-oz.) containers fresh baby spinach
2 TBL. butter
2 TBL. flour
1 C. milk
2 TBL. grated Parmesan Cheese
1/8 tsp. white pepper
Ground nutmeg, to taste
Bring water to boil in a large dutch oven. Add Spinach. Reduce heat; simmer, covered. about 5 minutes, or until spinach is wilted. Drain well; set aside. In a medium saucepan, melt butter over medium-low heat. Stir in flour; cook over medium-low heat 1 minute, stirring constantly. Using a wire wisk, stir in milk. Bring to a boil. Cook, stirring constantly, 1-2 minutes, until mixture thickens. Sir in cheese and pepper. Stir spinach into sauce, and heat throroughly. Spoon into serving bowl, sprinkle lightly with nutmeg.
